Almond Curls E-mail (20 pieces)

300 g unsalted white almonds
8 eggs
1 dl cold water
600 g sugar
1/2 tbsp lemon rind
200 g flour


    * Preheat the oven at 175°C.
    * Roughly chop the almonds.
    * Beat the eggs in a bowl with 1 dl of cold water.
    * Mix the chopped almonds with the sugar and the lemon rind into the egg and water mixture, and then sift in the flour.
    * Mix these ingredients thoroughly into a smooth batter.
    * Leave it in the refrigerator for approx. 1 ½ hrs.
    * Cover a baking tray with baking sheet.
    * Using a teaspoon, spoon the batter into little mounds on the baking sheet, leaving approx. 5 cm. between them.
    * Level the mounds out slightly with the curved back of a spoon.
    * Bake the almond curls in the middle of the oven for approx. 10 min.
    * Lift the biscuits directly from the baking tray and, whilst they are still as hot as possible, place them over a rolling pin or bottle, rounding them slightly.
    * Allow the almond curls to cool.
